Bolo de Morango e Pistácio Crocante - Strawberry and Crunchy Pistachio Cake







Antes de vir para Londres aproveitei cada minuto para fazer algumas das receitas que tenho na minha infindável lista de receitas a experimentar. 
A receita que vos trago hoje é uma junção de três dessas receitas, o famoso bolo fofo de baunilha, o creme de manteiga com nesquick de morango e praline de pistácio.

No fim de semana em que fiz este bolo tinha-mos visitas e foi a desculpa perfeita para por mãos à obra, o bolo é fofo, o creme doce e o pralie de pistácio é crocante com um toque salgado. 
Quando os nossos amigo chegaram a mesa já estava pronta para o chá. Eles aprovaram e o bolo desapareceu num instante. Espero que gostem tanto como nós gostamos :D



Before coming to London I made as many recipes from my not ending list of "to try recipes" as I could. 
The recipe I bring today is the junction of the all time famous fluffy vanilla cake, strawberry milkshake butter cream and pistachio praline.

We had a couple of friends coming to our place, on the weekend when I made this cake and it was the perfect excuse to get my hands on approach. The cake has a soft crumb, the cream is sweet and the praline is crunchy and somewhat salty. 
When our friends arrived the table was set and for the afternoon tea. They loved the cake and it vanished in no time. Hope you like it as much as we did :D

Bolo de Morango Com Praline de Pistácio

Para o Bolo:
* 370g de farinha;
* 1 colher de chá de fermento em pó;
* 1 pitada de sal;
* 1 chácena (250ml) de manteiga amolecida (de vaca e sem sal);
* 400g de açúcar;
* 3 ovos grandes;
* 2 gemas grandes;
* 310 ml de leite;
* baunilha q.b. (eu usei uma vagem mas podem usar essência) 

Para o Creme de Manteiga de Morango
* 6 claras grandes (~180g);
* 300g de açúcar;
* 400g de manteiga de vaca sem sal;
* baunilha q.b.;
* 50g de nesquick de morango;
* 1 colher de café de aroma de morango e corante de desejarem uma cor ou sabor mais forte)

Para o praliné de pistácio
* 125 g de pistácios picados (com ou sem sal);
* 125g de açúcar;
* 20g de glucose líquida;
* 30ml de água.

Preparação:
Para o praline, colocar num tacho pequeno a glucose, o açúcar e a água até que atinja os 140ºC, retirar do lume e adicionar os pistácios mexendo vigorosamente. Transferir de imediato o praline para um silpat, espalhar com uma espátula e esperar que arrefeça. Quando estiver sólido, partir em bocados e reservar.

Para o bolo, começar por peneirar a farinha, o fermento e o sal para uma taça.
Numa outra taça bater a manteiga com o açúcar até que a mesma fique leve e fofa. 
Partir os ovos para um jarro e mexer levemente. Adicionar os ovos à mistura da manteiga e do açúcar pouco a pouco misturando bem entre cada adição. Adicionar a farinha alternadamente com o leite (adicionar um terço da farinha, seguido de metade do leite, farinha, ovo, farinha...) Parar de bater assim que a massa estiver homogénea. 
Levar ao forno em 2 formas de 20cm a 180ºC por aproximadamente 30 minutos.

Para o Creme, adicionar as claras e o açúcar numa taça e colocar em banho-maria, o objectivo é que o açúcar se dissolva nas claras. (não deve atingir temperaturas superiores a 50ºC) Retirar a taça do lume e levantar as claras para obter um merengue (a este merengue chama-mos merengue suíço). Sem parar de bater, adicionar a manteiga (amolecida) pouco a pouco. Nesta fase o creme parece talhado mas basta continuar a bater e ele voltara a ligar novamente. Adicionar o nesquick e o aroma e corante, se for o caso. Continuar a bater por mais uns segundos até que o creme fique com boa consistência.

Strawberry and Crunchy Pistachio Cake

For the cake:
* 370g all purpose flour;
* 1 tsp baking powder;
* 1 pinch of salt;
* 1 cup unsalted butter, softened;
* 400g golden caster sugar;
* 3 large eggs;
* 2 egg yolks;
* 310ml milk;
* vanilla to taste (I used a whole pod)

For the Praline:
* 125g of pistachios roughly chopped;
* 125g caster sugar;
* 20g glucose;
* 30ml water. 

For the Butter Cream:
* 6 egg whites (~180g);
* 300g sugar;
* 400g unsalted butter, softened;
* vanilla to taste;
* 50g strawberry nesquick powder; 
* (strawberry essence or pink food colouring if u fancy)

Preparation:

For the praline, add the sugar, glucose and water to a small pan, cook the mixture until it reaches 140ºC. Take the pan out of the heat and add the pistachios. Quickly spread the mixture over a silpat mat and allow it to cool completely. When cooled chop roughly and save for the assembly of the cake.

For the cake, sift the flour, salt and baking powder to a large bowl. 
Cream together the sugar, butter and vanilla until it becomes pale and fluffy. 
Add the eggs and yolks to a jug and mix lightly just to break up the eggs. Slowly add the eggs to the butter mixture, mixing well between addictions. 
Finally add the dry ingredients alternating with the addiction of the milk starting and finishing with the dry engredients. Add the batter to two 20cm tins and bake the cakes at 180ºC for about 30 minutes.

For the Cream, add the whites and the sugar to a bowl. Place a bowl over a pan with simmering water making sure it does not touch the water (this is what we call a bain marie). We aim to dissolve the sugar in the whites so the temperature we are looking for is about 50ºC. Take the bowl out of the heat and beat the whites until you have a stiff glossy meringue. Now, start adding the butter in small batches. It might look curdled but it will come together as you beat it. Add the nesquick and the colouring or essence if using and keep beating until it is soft but spreadable.
